- 1 lb beets
- 6 large yellow onions
- 5 cups raw sunflower seeds
- ½ cup chia seeds
- 1–2 tablespoons sea salt

Instructions:
- Prep your veggies:
Scrub carrots and trim the ends. Peel beets (to remove oxalic acid found in the skin). Peel onions. - Grind:
Using my Black & Decker food processor fitted with both the S-blade and round blade, finely grind the carrots and beets first. Let it run for a few minutes until a smooth texture forms. Then, remove the round blade, add the onions, and pulse lightly. - Grind sunflower seeds:
Blend the sunflower seeds in batches (2.5 cups at a time) to a fine powder using a high-speed blender. I scored a Vitamix-style blender on Amazon for just about $100 — and it works like a charm! - Mix:
In a large bowl, combine ground vegetables, sunflower seed powder, chia seeds, and salt. Mix thoroughly.
Optional: Add spices like curry, vegan poultry seasoning, or your favorite herbs for extra flavor. - Form patties:
Use a ½-cup measure to scoop portions. Shape into patties. - Dehydrate:
